Cooking With Chronic Pain: Sweet & Spicy Chicken


Not my recipe but my husband and I LOVE this chicken dish. It goes well with just about anything and it's very simple to make. In my opinion it's more sweet than spicy, so if you want more heat try adding more of the Paprika flavors.

Ingredients:

Chicken Rub:

- 1 lb Chicken

- 1 1/2 tbsp Olive Oil

- 2 tsp Garlic Powder

- 1 1/2 tsp Chili Powder

- 1 1/4 tsp Salt

- 1 tsp Cumin

- 1 tsp Onion Powder

- 1/2 tsp Smoked Paprika

- 1/2 tsp Paprika

- 1/2 tsp Chipotle Chili Paprika

Honey Dijon Glaze:

- 1/3 cup Honey

- 1 tbsp Dijon Mustard

- 1 tbsp Yellow Mustard

- 1 tbsp Apple Cider Vinegar

- 1 tsp Lemon Juice

Directions:

1. Line a baking sheet with foil and lightly spray with cooking oil and set aside.

2. In a bowl, whisk chicken rub ingredients and rub all over chicken. Place chicken on baking sheet.

3. Move oven rack to the top and broil chicken for 6 minutes on high on each side.

4. Meanwhile in a small bowl, make the honey glaze.

5. Remove chicken from the oven and brush with honey glaze and broil again for 1-2 minutes.

6. Remove chicken from the oven and brush remaining honey glaze on top and serve hot.

**Can garnish with a lemon on top. Also I slice my chicken thin, but it works with thicker cuts as well**
